What is Baking Powder?

Baking powder is a mixture of a carbonate or bicarbonate with a weak acid and serves as a dry leavening agent that helps batter to rise when baked. It is made with baking soda as its base, cream of tartar is added, and sometimes corn starch or for grain-free versions, tapioca starch or another grain-free starch may be added. The amount of starch used is minimal.

**Aluminum-free baking powder is simply baking powder that does not contain aluminum as one of its ingredients. Aluminum is used in baking powder to make it heat-activated; an effect triggered once the dough comes in contact with heat and not from moisture, which is how non-aluminum baking powders work.
